Recipe--Ginger Pecan Cookies



GINGER PECAN COOKIES


1 c. butter
1 c. brown sugar

Cream together with a mixer.

Beat in 1 egg.  (Opt: add ¼ c. molasses)

Stir together:
            2 ½ c. flour
            2 t. baking soda
            1 t. ginger
            1 t. cinnamon
            ½ t. salt

Add flour mix to first mixture.

Add 1 t. vanilla.
Add 1 c. chopped pecans at end.

Chill in fridge.  (I didn't do this--I couldn't wait!)  J
Form into balls to bake.
Roll in white sugar and press flat.  Put them on a greased baking sheet.

Bake at 350°F. for 10-12 minutes.



OR
Put a roll of dough on a sheet of waxed paper, wrap, twist ends and freeze.
When ready to bake, unwrap, slice and place on a greased cookie sheet.

Don’t overbake.  Pull out when the mark made by touching the top with your finger remains firm, not squishy.

Cool on a rack and store in a tin.

Snow Pix Plus



We’ve had quite the snowy cold snap here in Oklahoma lately.
Oh, not like the North, of course, but it’s been a lot for us.

Lows of 11° were looking kinda common there for awhile.
And the wind chills were definitely below zero.


The wildlife outside is feeling it.

I may have seen a little coyote on the deck tonight.
I think it was too tall for a fox. 

I only saw him for maybe 3 seconds,
but we did look at each other eye-to-eye.

(The raccoons and skunks and possums had already eaten
their nightly portion of kibble.)


And today was the first day (after a long and gloomy stretch)
that we finally got to see some sunshine and blue skies. 

What a blessing that was!!


I even pulled out my bread starter 
and revived it for some bread and rolls the other day.  

(I need to do that much more often!)


And some of us enjoyed a few evenings 
crashed in front of the TV, 
watching Sherlock, Season 3!

Restoring Balance



James 4 verse 8

Draw near to God
and He will draw near to you.

I feel like I need to balance yesterday’s quote
with today’s Bible verse.  Both are true.

You know, a lot of things in the Bible seem contradictory
but both are true.

I have always thought that’s how we are reminded
that we are but frail humans. 

Do you remember “givens” in doing math proofs? 
The given states what you already know to be true,
and then you deduce from that. 

I don’t think most of us have
a big enough “given” to start out with.

Of course, our brains surely could not contain
the entire “given” that is the whole revelation of truth. 
They would explode, for sure! 

Or at least mine would!  LOL
